KRNC April Student Spotlight: Emily Anthony

The Kendall Reagan Nutrition Center would like to highlight Emily Anthony as our Student Spotlight for April!

Emily Anthony is a first-year graduate student studying Food Science and Human Nutrition, with a focus on Community Nutrition. Anthony is originally from the Pacific Northwest, residing in Bothell, Washington. She found herself in sunny Colorado after working in Portland, Oregon for a few years after her time in Washington.

With a background in molecular biology, Anthony is interested in ways to effectively translate the nuances of nutrition science to help individuals improve their health and overall wellness. She is currently working with CSU Extension in developing a diabetes education curriculum for extension agents.

After obtaining her Registered Dietitian Nutritionist credentials, Anthony hopes to work in a clinical nutrition setting. Here, she wants to focus on chronic disease management and prevention. Down the road, she wants to gain additional credentials as a Certified Diabetes Educator and work in outpatient settings. Ultimately, she hopes to guide individuals in exploring their personal relationship between nutrition and health by assisting them in finding the tools that help them live well.
