While the phrase “ghost kitchen” may conjure up images of haunted houses, the reality is a bit more mundane.
For Kathryn Quintero, coming to CSU gave her an opportunity to find success as a first-generation student. Her many leadership roles led her to be recognized as an outstanding graduate from the Department of Food Science and Human Nutrition’s Hospitality Management Program.
The Aspen Grille is serving up an Asian Pacific Islander Desi American-inspired menu April 6-9. The menu features dishes from India such as lentil soup, pork vindaloo, and chicken biryani.
This semester’s menu will include new and diverse dishes as well as a special menu to honor Black History Month.
To celebrate the day, meet first-generation college student Kathryn-Quintero, from Glenwood Springs, Colorado, a fourth-year hospitality management major minoring in business administration.
The Hospitality Management Program is offering food for take-out and the usual in-person dining with reduced capacity at the Aspen Grille.
