Carissa Weiberg is a senior in the Colorado State University Department of Food Science and Human Nutrition majoring in nutrition and food science with a concentration in dietetics management. She has been on the Dean’s List for six semesters and will graduate magna cum laude. She currently works as a nutrition assistant at UCHealth and is ServSafe and CPR certified. Weiberg also volunteers with Respite Care, Inc. and Eat Well at CSU.

Where are you from and what brought you to CSU?

I am from Arizona and my love for Colorado and CSU’s great nutrition program brought me to CSU.

What obstacles have you overcome to get the graduation?

I have struggled with mental health issues, homesickness, and COVID-19.

How have your academic experiences here and your professors, mentors, and advisers helped you overcome these obstacles and be successful in your major?

My professors, mentors, and advisers have helped me feel valued and given me the courage to keep going. Experiences with friends and with my sorority, Kappa Alpha Theta, have helped me feel like Fort Collins is home.

What activities have you been most involved in? What are some accomplishments that you are most proud of during your time at CSU?

I have been very involved with my sorority, Kappa Alpha Theta, where I served on the bylaws committee ; volunteering with CSU Early Childhood Center, Respite Care Inc., with Eat Well @ CSU, and Poudre School District. My shadowing at UCHealth in Fort Collins led to a part-time position as a nutrition assistant. I’m proud that I was on the Dean’s list every semester and am graduating magna cum laude.

What are your plans after graduating? What will you miss most about CSU?

I plan to move home to Arizona until graduate school next fall. I will miss my friends, mentors, and being able to live in Fort Collins.
