Lauren Matheu is a native of Colorado and grew up in Aurora. She moved to Fort Collins for her undergraduate degree and is a senior graduating in May 2022.

Lauren is not entirely sure what exact area of nutrition she would like to be specific to yet, but being a part of the practicum and working with the KRNC has sparked her interest in diabetes prevention and weight management.

She hopes to become a Registered Dietitian Nutritionist (RDN) in the long run, but for now, Lauren is going to be taking the nutrition and dietetics technician test after graduation and working under an RDN from there.

Matheu remarks, “My favorite part about the practicum has been working with the RDNs on staff and getting to see how they work with different clients, as well as participating in the themed cooking classes we put on.”

The Kendall Reagan Nutrition Center is a part of the Department of Food Science and Human Nutrition in CSU’s College of Health and Human Sciences.
