Jenny Whittington is the October 2021 KRNC Student Spotlight!

Jenny Whittington is a first-year graduate student pursuing her degree in the Department of Food Science and Human Nutrition. She is a native of Fort Collins and lives in Windsor with her husband, three kids, and a dog who runs away all the time. Whittington is interested in nutrition research, particularly functional foods, and nutraceuticals. She will be working in faculty member Charlene Van Buiten’s and Sarah Johnson’s lab studying blueberry polyphenol bioavailability when combined with plant proteins.

A fun fact about Whittington is that she can make her own adobe and she built an outdoor horno oven with her kids for baking bread.

Whittington has a favorite part of working at KRNC: “The KRNC cooking classes have been my favorite assignments yet because I love sharing nutrient trivia about food and I think cooking is an essential life skill. I have also enjoyed working with the KRNC dietitians and learning about their health philosophies and observing their skilled counseling techniques,” she said.

The Kendall Reagan Nutrition Center is a part of the Department of Food Science and Human Nutrition in CSU’s College of Health and Human Sciences.
