This January, we are celebrating Elle Schuldt as our Student Spotlight. She is an undergraduate senior studying health and exercise science, with a concentration in health promotion. Schuldt is from Highlands Ranch, Colorado, and has enjoyed her time spent in Fort Collins for the last four years.
Schuldt is interested in community nutrition and public health. She is also passionate about studying the interactions between exercise and nutrition and how they contribute to a healthy lifestyle.
After graduation, she plans on pursuing a career in corporate health and wellness, where she is able to support and encourage employees’ wellbeing while creating an organizational culture of health for corporations. At the Kendall Reagan Nutrition Center, Schuldt enjoys being part of the virtual cooking classes.
“I loved contributing to the development process for the classes and collaborating with the RDNs and the other practicum students,” Schuldt said.
She also enjoyed writing the October newsletter about how to stay active at home, which is a topic that she is very passionate about and incorporates her background in exercise science.
The Kendall Reagan Nutrition Center is in the Department of Food Science and Human Nutrition, part of CSU’s College of Health and Human Sciences.
