Maura Benton, KRNC Student Spotlight

Maura Benton grew up in Northbridge, Massachusetts and attended Simmons University where she received her Bachelor’s degree in communications with a minor in nutrition. Currently, she is a graduate student at Colorado State University, pursuing her Master’s Degree in Food Science and Human Nutrition.

Prior to beginning her graduate studies, Maura worked as a Program Manager at a community nutrition non-profit in Western Massachusetts, where she designed and delivered a nutrition and culinary education program for school-aged children.

Maura is primarily interested in nutrition education and school nutrition but continues to expand her areas of interest through course work, and both professional and volunteer experiences. This summer, she is working for CSU’s Housing and Dining Services as an Employee Wellness Program Assistant where she aids in the facilitation of an 8-week wellness challenge for housing and dining employees.

After completing her Master’s degree, Maura plans to become a Registered Dietitian Nutritionist (RDN). “I am looking forward to experiencing different careers for RDs during the internship program where I hope to get exposure to working as a school dietitian and individuals with eating disorders.”

Maura explains, “I love leading the various cooking classes offered by the KRNC because I have the opportunity to practice my management, public speaking, and cooking skills concurrently.” In addition, she values the opportunity to shadow and work with the RDs, Shelby and Kalyn, as they are great mentors.
