Kendall Reagan Nutrition Center Recipe of the Month – Gingerbread cornbread

Appreciate the spicy flavors of gingerbread as a savory holiday side dish!

Ingredients:Gingerbread Cornbread recipe. Cornbread on a silver platter with garland.

  • 1 cup yellow cornmeal
  • 1 cup whole wheat flour
  • ¾ cup tightly packed dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1 teaspoon Kosher salt
  • 1 large egg, beaten
  • ¼ cup molasses
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1/3 cup vegetable or olive oil

Directions:

  1. Preheat oven to 400°F
  2. Butter and flour an 8 x 8 baking pan
  3. In a large bowl, mix cornmeal, flour, baking powder, baking soda, brown sugar, ginger, cinnamon, cloves, and salt
  4. Add egg, molasses, buttermilk, vanilla, and oil and mix until smooth
  5. Pour into the baking pan and bake for 20-25 minutes until a test toothpick or knife comes out cleanly.
  6. Let cool 10 minutes in the pan and enjoy!
